
Stuffed peppers without meat
Description
The recipe won't take much time. This dish is healthy, very vibrant, and incredibly delicious. The base is cauliflower, to which you can add any spices, herbs, or legumes. Before serving, you can top it with fresh avocado and your favorite sauce, for example. It's impossible to resist, especially since the recipe is very simple. Remember it and try it in your own kitchen. Serve hot.

1. Wash the cauliflower, dry it, grate the florets on a grater or chop in a blender. Place on a clean towel and squeeze thoroughly to remove excess moisture. Transfer to a frying pan, add a little oil. Sauté the cauliflower for about 5 minutes until tender. Optionally, add onion, garlic, and herbs. Season with salt and pepper to taste at the end.

2. Add canned beans, salsa, and spices to taste to the cooled cabbage. Mix thoroughly and add a little lime juice. That's it, the filling is ready.

3. Wash the peppers, clean them, and dry. Fill them with the stuffing. Place the peppers in a heatproof dish and cover with foil. Bake for 20-25 minutes at 180 degrees. Then remove the foil, increase the temperature to 200 degrees, and bake for another 15-20 minutes until golden brown and fully cooked.

4. Before serving, garnish with avocado slices, sprinkle with herbs, and drizzle with lime juice. These are such great meatless stuffed peppers.
