
Stuffed Pattypan Squash for Winter

Wash the pattypan squash thoroughly, cut off the tops, and remove the flesh. Then bring water to a boil and blanch the pattypan squash in boiling water for 2–3 minutes.

Slice the onion into half-moons and sauté in vegetable oil until partially cooked.

Sauté the carrots separately.

Cut the tomatoes into cubes and sauté in vegetable oil with one tablespoon of oil and tomato paste; simmer for 2–3 minutes.

Now combine the vegetables, add salt and sugar to taste, and fry until cooked through.

Stuff the pattypan squash with the prepared filling and place them in sterilized jars. Pour 1 tbsp of oil on top and cover with boiled lids; sterilize the jars, then seal them.
