
Stuffed drumsticks
Description
The recipe won't take much time. Chicken drumsticks can be stuffed with many ingredients, such as vegetables, ham, cheese, mushrooms, and their combinations. Deglazing with wine helps keep the drumsticks juicy, while thyme adds a unique aroma to the dish. Serve the stuffed drumsticks hot, accompanied by oven-baked potatoes. Serve hot.

Season boneless chicken thighs with salt and pepper on all sides.

Prepare the filling: clean the mushrooms, cut into small pieces, place in a bowl, add grated Emmental, egg yolk, grated Parmesan, and breadcrumbs. Season with salt, black pepper, and add 1/2 tsp of chopped fresh thyme leaves. Mix well with a fork, then place 2–3 tablespoons of the filling onto each chicken thigh, close them tightly, and wrap with kitchen twine.

In a high-sided skillet, heat the olive oil and butter, then sauté the garlic clove for a few seconds. Add the stuffed chicken thighs and sear on both sides until golden brown. Pour in the wine and let it evaporate. Add the broth, black pepper, and 1-2 thyme sprigs, season with salt, bring to a boil, cover with a lid, and simmer over medium heat for 40 minutes, or until the meat is tender. Halfway through cooking, turn the thighs and baste them occasionally with the cooking juices.
