Description

For this recipe, choose large chicken drumsticks with intact skin. You can substitute the hard cheese with any other type, such as mozzarella or Adyghe cheese—they'll be just as delicious. I don't recommend replacing dill with parsley, as dill is perfect here. Parsley or cilantro will give a completely different flavor. Check out the recipe.

    Prepare the ingredients. Wash the mushrooms thoroughly, remove the fat, stems, and yellow rough skin from the joints. Peel the onion and garlic. Wash the mushrooms and herbs. Let's get started!

    Finely chop the mushrooms, onion, and garlic. Pour vegetable oil into a frying pan, add the mushrooms, onion, garlic, salt, pepper, and fry until cooked.

    Now you need to prepare the chicken drumsticks for stuffing. Very carefully remove the skin from the chicken leg like a sock. When you reach the joint, cut off the bone so that part of the joint remains at the end of the skin. Remove all the meat from the bones.

    In a large bowl, combine chicken mince with fried mushrooms and onions, grated cheese, and chopped dill. Season with salt and pepper to taste. Add sour cream.

    Divide the minced meat into three parts, carefully fill the legs, pressing down to avoid air pockets. Fold the skin over like an envelope and secure with toothpicks on both sides.

    Preheat the oven to 200 degrees. Line the baking sheet with parchment paper or place a silicone mat to prevent the skin from sticking. Place the chicken thighs seam-side down, brush the legs with vegetable oil, and put them in the oven. Reduce the temperature to 180 degrees and bake for 30 minutes.
