
Stuffed squids
Description
The recipe won't take much time. You can prepare the stuffed squids "Mice" with absolutely any filling—just follow your taste preferences. If you'd like to try something new and original on New Year's Eve, take a closer look at this recipe. This dish will undoubtedly make a splash among your guests. Serve hot.

Prepare all the ingredients. Cook the rice in advance in salted water and drain through a sieve.

Pour boiling water over the defrosted squid bodies for one minute, then drain the water and immediately place the squid into icy water.

Remove the skin from the squid, clean out the innards and the cartilage, then rinse them under running water. Carefully cut off the fins.

Heat oil in a skillet and sauté diced onion until soft.

Add the mushrooms and sauté everything together until fully cooked. You can use any mushrooms, both fresh and frozen ones are suitable.

Add the cooked rice, mix well, heat for a couple of minutes, then remove from heat and let the mixture cool slightly.

Once the filling has cooled slightly, add the previously cut squid fins, diced into cubes (you can add all of them or just a small portion). Also add chopped herbs and grated cheese. Season with salt and pepper to taste.

Mix well. The filling is ready.

Stuff the squid bodies tightly with the filling, filling them about two-thirds full, and secure the edges with toothpicks.

Transfer the squid to a greased baking dish; I usually line it with foil beforehand, then spread sour cream on top and sprinkle with the remaining cheese.

Place in a preheated oven at 180 degrees for 5-7 minutes to bake.

Transfer the finished dish to a plate. You can serve the squid immediately, but I suggest decorating them symbolically to represent the animal of the coming year. I used peas for the eyes and nose. From boiled sausage, I cut out two tails and four small circles. Make two cuts on the top of the body and insert the ears. If desired, boiled sausage can be replaced with boiled carrots or fresh cucumbers.
