
Stuffed zucchini according to Turkish recipe
Description
The recipe won't take much time. You can, of course, choose the mince spices to your taste. Dried mint is often used in Turkey. You can also add lemon juice to the mince. There are plenty of variations; let's make one of them. Serve hot.

Prepare all the necessary ingredients, including salt, pepper, and spices.

Cut each zucchini into 3 parts, trimming a bit off the ends if needed for stability. Using a teaspoon, scoop out the center, leaving the walls and bottom intact.

Rinse the rice and bulgur several times and pour boiling water over them, let soak for 10-15 minutes.

Finely chop the onion and sauté until soft.

Add the minced meat and fry until half-cooked, then add 1 tbsp of tomato sauce. Mix and fry for 1-2 minutes.

Drain the water from the grain. Turn off the stove, add your favorite spices and the grain to the meat mixture. Mix everything thoroughly. You can add some herbs. Season with salt and pepper to taste.

Salt the zucchini inside slightly and fill them tightly with the minced meat.

Place a slice of tomato on top of each zucchini.

Transfer the cooked zucchini to a saucepan. In a container, mix 1–1.5 cups of water with 2 tablespoons of tomato paste. Season with salt to taste and pour into the saucepan. The sauce should not exceed half the volume of the saucepan. Bring to a boil, then simmer over low heat, covered, for 35–40 minutes.
