Stuffed Pancakes

Description

The recipe won't take much time. If you have a little leftover ground meat and rice from lunch or dinner, and your family is large, just make pancakes and stuff them with this filling. If you wish, you can add various spices and herbs, finely chopped tomato or cucumber, sour cream or mayonnaise to it. Serve the pancakes with garlic sauce—it will perfectly highlight the flavor of the dish.

    Prepare the listed ingredients. Use any ground meat: pork, beef, chicken, etc. You can even finely chop meat or chicken if you have them fresh. Peel the onion immediately and rinse it in water.

    First of all, prepare the pancake batter. Crack the chicken eggs into a deep container and add salt. Beat everything with a whisk for 2 minutes.

    Pour milk of any fat content and whisk it with a whisk. Add water: cold or warm, but not hot, so that the egg mixture doesn't curdle. Whisk everything again.

    Add the high‑grade wheat flour to the container in portions, mixing it into the liquid mass, but do not whisk, so that lumps do not form.

    While the dough “rests,” dice the onion into small cubes and sauté it in a pan with vegetable oil for about 3–4 minutes until golden, stirring occasionally.

    Place the ground meat, mash it evenly with a fork or silicone spatula, and fry for 3–5 minutes, then stir and fry for another 4–5 minutes.

    All the meat juice should evaporate, and the minced meat with onions should be nicely fried. At this stage, salt it and pepper it, add various spices and aromatics.

    Place the ground meat and boiled rice on a plate, mix thoroughly, creating a filling for pancakes. If desired, add other ingredients that complement them in flavor.

    By this time the batter will be just right. Heat a crepe pan and grease it with oil. Pour half a ladle of batter and swirl it, fry the crepe for about a minute on each side. If the edges start to burn while the center remains undercooked, simply lower the heat. Cook the crepes with the remaining batter.
