
Stuffed duck in the oven
Description
The dish is prepared without unnecessary complications. The duck turns out absolutely delicious with this recipe. The combination of orange and garlic gives it amazing flavor and aroma nuances. At first glance, they seem completely incompatible, but in the marinade they blend perfectly. I believe that with such a marinade, one shouldn't use too many spices, as they would overpower this wonderful taste and fragrance. That's why I only use freshly ground allspice. The dish is now ready to be served.

Prepare all the necessary ingredients. I have a domestic duck. It needs to be washed both outside and inside, remove any remaining feathers, prick the skin with a needle in areas where fat is most concentrated so that the fat can drain out during cooking. Also, trim the wing tips.

Zest one orange and grate finely, then squeeze the juice. Mix the zest with the orange juice, add pressed garlic, honey, salt, and pepper.

Rub the duck inside and out with the resulting marinade, and let it sit for at least 2 hours. If possible, leave the duck to marinate overnight in the refrigerator—it will be very delicious!

Cut the orange and apples into medium-sized pieces. I don't peel them, but you can—this is optional.

Shake off garlic pieces and zest from the surface of the duck using a paper towel, as they will burn during roasting. Stuff the duck's cavity with fruits, and you can slightly salt it inside and outside.

Transfer the duck to a baking dish or a deep roasting pan, cover with foil, and place in the oven for 1 hour. Then remove the duck from the oven and drain about half of the rendered fat (as a large amount is released). Arrange small pieces of potato around the duck. Return the duck to the oven (at 180°C) for another 40–60 minutes, this time without covering it with foil. Note that different ducks will require different cooking times, depending on the duck's weight and whether it is a farm-raised or store-bought bird.

The duck is ready. It turned out very juicy and tender, the meat easily separates from the bone. Serve the duck with potatoes, oranges, and apples it was cooked with, and you can also garnish it with fresh orange slices.
