Stuffed chicken with mushrooms and buckwheat

This dish always looks very impressive and festive, so even if you prepare this chicken for dinner, you'll surely lift your family's spirits. 1) First of all, thoroughly rinse the chicken inside and out, let the bird dry slightly, then rub it all over with spices, minced garlic, and coarse salt. Place it in a bowl, cover with plastic wrap, and refrigerate for several hours to marinate. 2) Once the marinating time is up, start cooking the buckwheat. Lightly salt the water in a pot and cook the grain until it's slightly underdone, as it will continue cooking later. Drain the water and set aside. 3) Heat a skillet over medium heat, add vegetable oil, and sauté chopped onion until translucent. Add mushrooms cut into small pieces. When the mushrooms are almost ready, add grated carrot and cook for another couple of minutes. 4) Now the buckwheat and the mushroom mixture with onion and carrot are ready. Combine them together, season the filling with salt and pepper to taste. Keep in mind that the chicken itself has already been salted, so be careful not to over-salt. 5) Take the marinated chicken out of the refrigerator and immediately secure the neck opening with toothpicks. Carefully stuff the cavity near the legs with the prepared filling, then close and secure this opening with toothpicks as well, to prevent the filling from spilling out during cooking. 6) If you're unsure about your oven's performance, cook the chicken in foil or an oven bag. If your oven works well, simply place the chicken on a greased baking tray. 7) Put the chicken in a preheated oven at 180°C (350°F) and cook for 1 to 1.5 hours, depending on the bird's size. If cooking uncovered, baste the chicken occasionally with the fat accumulating on the tray to prevent burning. If using foil or an oven bag, open it 15–20 minutes before the chicken is done to allow a golden crust to form.
