Stuffed rib rack
Description
The dish is prepared without unnecessary complications. Stuffed pork loin is an excellent choice for both hot and cold serving. You can exclude ingredients from the filling according to your preference, for example, omit croutons and celery. The process of preparing stuffed pork loin is simple: prepare the filling by sautéing the vegetables, cut the meat or shape it into a "sheet," spread the filling over it, and roll it up. Then sear it and bake in the oven. Serve the finished dish.
Instructions
- 1
Step 1

1. Place the croutons into a medium-sized bowl. If you don't have ready-made ones, you'll need to prepare toast.
- 2
Step 2

2. Crack two eggs into the croutons.
- 3
Step 3

3. Add half a cup of cooled boiled water and mix.
- 4
Step 4

4. Wash the vegetables (carrot, apple, onion, and celery), peel and cut into small cubes.
- 5
Step 5

5. Heat a skillet and melt the butter in it over medium heat. Sauté the chopped apple, carrot, onion, and celery in the butter until golden, about 5–7 minutes.
- 6
Step 6

6. Prepare the pork loin. Use a sharp knife to remove excess fat.
- 7
Step 7

7. Cut the pork loin lengthwise, i.e., open it up as shown in the illustration.
- 8
Step 8

8. The split pork loin should be of approximately uniform thickness across its entire surface.
- 9
Step 9

9. Mix the cooked vegetables with the croutons. Place the prepared filling onto the meat, leaving a 2-centimeter edge "clean."
- 10
Step 10

10. Very carefully roll up the pork chop with the filling.
- 11
Step 11

11. Next, we will need cooking twine.
- 12
Step 12

12. Securely "tie up" the pork loin with the filling. First, tie it lengthwise, then with separate strings across.
- 13
Step 13

13. In a preheated large skillet with vegetable oil, sear the stuffed pork chops. Turn the chops using wooden spatulas—never pierce the meat with a fork, as the juices should remain inside.
- 14
Step 14

14. Sear the pork loin with filling on all sides until a golden crust forms.
- 15
Step 15

15. Grease a baking dish or baking sheet with vegetable oil and place the fried stuffed pork loin on it.
- 16
Step 16

16. Bake the stuffed pork loin in a preheated oven at 180 degrees Celsius for 50 minutes. If using a meat thermometer, the stuffed loin is done when it reads 77–80 degrees. Let the cooked stuffed pork loin rest for about 5 minutes before slicing. Serve hot with rice or potatoes. This dish can also be served cold.
