    Remove the skin from chicken breasts, take the meat off the bones, and grind it together with a bread roll soaked in water or milk. Add salt, pepper, onion or garlic to the minced meat, and include the milk or water in which the bread was soaked.

    We knead the minced meat and then beat it (take it into your hands and throw it back into the dish or onto the counter, of course preventing it from scattering). This makes the meat mixture fluffy and airy. I don't add eggs to the minced meat, as they bind it too tightly; without eggs, the cutlets turn out very tender. There's no need to coat them in breadcrumbs either—simply shape the cutlets with wet hands and place them onto a frying pan with hot oil. We'll need cutlets of two different shapes. For the "Kolosok" (ear of grain), we need narrow, elongated bars. Quickly sear them on both sides until golden brown, but don't cook them through, as they will be further baked in the oven.

    Remove the cutlets from the pan and let them cool.

    Thaw the dough in advance, but not completely—just enough to separate it into individual sheets. Roll out the dough (puff pastry should be rolled in one direction), cut it into rectangles, then make diagonal cuts along each side to create a braid-like pattern. Place a patty onto the rectangle and start braiding by alternately overlapping the strips over the patty.

    Place the braid-shaped patties onto a greased baking sheet, brush the dough with beaten egg, and bake for 20 minutes at 180 degrees until golden brown.

    We shape the next portion of the patties into round flatbreads.

    To braid the dough around them, we cut the dough into narrow strips. The strips should be 15 cm long. Place the strips overlapping in a radial pattern. You can use either three or four strips, depending on which the spaces between the braid will be larger or smaller. Join the strips together at the center over the patty, forming a "button," creating a "bell" shape.
