Description
Essentially, our main goal when preparing mantu filling is to make sure the mantu turn out juicy, because mantu are not just large dumplings ;) They have a distinct flavor, and the filling must be prepared differently. Every Uzbek knows that the key secret lies in the filling, since the dough used is the same as for regular dumplings. So, to make this dish truly delicious, put in the effort and prepare the mantu filling using this recipe: 1. The first secret: instead of mincing the meat in a meat grinder, we'll chop it into small pieces with a knife. To make this easier, you can chill the meat in the freezer for a little while before cutting. Place all the chopped meat into a bowl. 2. The next secret: use a generous amount of onion. Finely chop the onion, season with salt and pepper, then mash it with your hands until the juice is released. Add it to the meat and mix well. At this stage, you can also add carrots, basil, fresh herbs, or other spices—let your imagination run wild :) 3. And another secret for incredibly juicy mantu: zucchini! Cut the zucchini into small cubes, but don't mix it into the filling. Instead, add it directly when assembling the mantu. So, just before shaping the dumplings, place two bowls nearby—one with the zucchini cubes and one with the meat filling—and put a portion of filling and a piece of zucchini into each dumpling.
