
Lamb mince at home
Description
Cut the lamb into pieces and remove the tendons and membranes. Then pass the meat through a meat grinder. Add spices and onion to obtain lamb mince. This mince can be used to prepare kebab.

Grind cumin, coriander, and pepper in a mortar and add to the onion that has been passed through a meat grinder with large holes. Add salt and mix thoroughly to ensure the spices are evenly distributed throughout the mince.

Pass finely chopped lamb meat through a meat grinder together with tail fat. If desired, you can add chopped cilantro.

Add the chopped tail fat to the onion, along with the ground lamb. Mix everything thoroughly and beat it against the table. The better the meat mixture is beaten, the more securely it will hold together on the skewers.

Wrap the meat around the skewers. Wrap it, don't pierce it! Then place in a cool place, for example, in the refrigerator, for 30 minutes. After that, grill over a barbecue or bake in the oven using the grill setting.
