Soak the chickpeas in water for 6–8 hours beforehand. It’s more convenient to do this overnight. Then rinse and thoroughly dry them with paper towels.

Chop the chickpeas with onion, garlic, and cilantro in a blender or through a meat grinder. Add salt, ground black pepper, and coriander, then blend everything again until smooth.

Roll the resulting mixture into balls the size of a walnut. If the filling is too crumbly, you can add a little wheat flour, but it’s best not to overdo it.

Heat the vegetable oil in a heavy-bottomed pot or skillet. Drop the falafel balls into the hot oil and fry until lightly golden.
