
Falafel with hummus
Description
A tasty appetizer for any gathering. Falafel is usually served in pita or lavash with fresh vegetables. That is why it is a staple vegetarian dish in the East. Pita or lavash are sold in any supermarket, but you can make the flatbreads yourself if you wish. Serve with herbs and sauce.

Step 1

1. Using a food processor, grind 400 grams of chickpeas, add 1 tablespoon of water, 2 finely chopped onions, garlic, cumin, coriander, salt and pepper, baking powder, and flour. Then add another 400 grams of chickpeas. Process everything very thoroughly into a smooth, homogeneous mixture; if it doesn't seem creamy enough, add a little more water.

2. Place the mixture in a container and let it cool for 30 minutes.

3. Meanwhile, make the hummus. Place 100 grams of chickpeas, 3 tsp water in the blender bowl, add 1 clove of garlic, the juice of half a lemon, 3 tablespoons olive oil, salt, a little parsley and coriander. Blend everything until smooth, adding water if needed.

4. From the first dough, shape round pies and dust lightly with flour.

5. Fry the falafel for 3–4 minutes on each side in a pan with vegetable oil. Serve the dish with spicy hummus.
