
Falafel
Description
Suitable for both holidays and everyday meals. Falafel is an Arabic dish of chickpea balls fried in oil.

Step 1

1. Coarsely chop the onion bulb to yield approximately 1 cup. Finely chop the cilantro and parsley. Cut the tomato, onion, and bell pepper for garnish. Put the chickpeas in a large bowl and add enough cold water to cover them by about 5 cm. Soak overnight, then drain. Place the chickpeas and onion in a food processor bowl. Add the parsley and cilantro greens, salt, red pepper, garlic, and cumin. Process until smooth.

2. Add baking powder, 4 tablespoons of flour, and mix. Shape the dough into a small ball. If the dough sticks to your hands, add more flour. Place the dough in a bowl, cover, and refrigerate for several hours.

3. Shape the mixture into small balls the size of a walnut. Heat the vegetable oil in a deep saucepan or skillet and fry 1 ball as a test. If it falls apart, add a little more flour.

4. Then fry about 6 balls at a time for several minutes on each side until golden. Pat the balls dry on paper towels.

5. Place the balls on lavash and garnish with sliced tomato, onion, and bell pepper. Drizzle with Tahini sauce thinned with water, and serve.
