Beef fajitas

Description

Beef fajitas are made with fresh seasonal vegetables, cheese, and, of course, excellent beef. You can choose vegetables to your taste and according to the season. Beef can be marinated in lime juice alone, but adding half a cup of tequila works wonders! Bell peppers, chili peppers, tomatoes, cilantro (which can be substituted with parsley), and onions are all easily available. Perhaps the hardest ingredient to find might be a good ripe avocado, but fajitas won't suffer much without it. Tequila can be replaced with wine or sherry.

    1. Rinse the beef tenderloin and make cuts to a depth of 3/4, with the thickness between cuts about the width of a finger.

    2. Wash and finely chop the chili pepper. Peel and mince the garlic. Squeeze juice from the limes. Wash and chop the cilantro.

    3. In a small bowl, mix the minced garlic, chili pepper, coriander, and lime juice. Add a little alcohol to the marinade—dry white wine, sherry, or tequila. It's Mexico, after all!

    4. Place the meat in a dish with high edges. Pour the marinade over it and refrigerate for a couple of hours. It would be better, of course, to leave the meat in the refrigerator overnight.

    5. About half an hour before the meat finishes marinating, start preparing the vegetables. Wash and chop them. Cut them into pieces or slices that will be convenient to eat in a tortilla. Start with the tomatoes. Many of my friends leave the stem on, but I always remove it.

    6. Clean and slice the bell pepper into strips, cut the onion into rings, the lime into wedges, and the avocado (if using) into small pieces. Finely chop some fresh coriander and grate the yellow cheese on a grater.

    7. Just before your coals are ready for grilling the beef tenderloin, place a skillet on the grill with a few tablespoons of olive oil. Add the chopped onion and sauté until soft for 2-3 minutes, then add the bell pepper, cooking until it becomes tender as well. Finally, add the tomatoes to the pepper and onion mixture for a few minutes. Stir, cook for 2-3 minutes over heat, then set aside.

    8. Grill the tenderloin to your desired doneness. I like my meat juicy or bloody, so I cook the beef for no more than 10 minutes.

    9. During frying, baste the beef with the marinade.

    10. Set up a "bar" for "mass production" of fajitas. Arrange all the vegetables and meat on the table, and prepare the tortillas.

    12. Place several pieces of beef, bell pepper, avocado, tomatoes, onion, cilantro, and cheese onto the tortilla, sprinkle the filling with lime juice, and roll up the tortilla.
