
European dessert
Description
The dish is prepared without unnecessary complications. The dessert takes a long time to prepare, but always impresses guests. A layer of fruit jelly, a layer of whipped cream with pineapple, and a layer of fruit purée (here, kiwi). The finished dessert can be served at the table.

Step 1

First layer: Make red marmalade, preferably a day in advance. Soak 1 sheet of gelatin in cold water for 5 minutes.

Meanwhile, place 200 g of fruit purée (strawberry, blackcurrant, etc.) in a saucepan over low heat. As soon as it warms up (do not bring to a boil), remove from heat. Take out the gelatin sheet, dry it with a towel, and dissolve it in the hot purée, stirring. Let it cool for about 30 minutes.

Pour about 2 tablespoons of red jelly into the bottom of the glass using a funnel. Let cool to room temperature for 2 hours. Cover each glass with plastic wrap, then refrigerate for at least 4 hours, or overnight if possible.

Second layer: Cut the pineapple into small pieces (about 5 mm squares).

Melt 2 tablespoons of ghee in a skillet, add 3 tablespoons of brown sugar, and cook until caramel begins to form. Add pineapple cubes and sauté for 3–4 minutes, stirring, then add the juice of ½ lime. Once done, remove from heat, let cool, and store in the refrigerator in a tightly sealed container. Also, prepare the custard cream the day before.

On the day of serving: place 1 sheet of gelatin in a dish with cold water. Meanwhile, heat the custard in a saucepan over low heat, and as soon as it becomes sufficiently warm (do not bring to a boil), add the gelatin sheet to the saucepan, stirring. Let cool for 45 minutes.

15 minutes before the end of this time, prepare 200 g of whipped cream.

Add the cold cream to the whipped cream, gently folding with a spatula.

Mix thoroughly, add diced pineapple and gently stir. The second layer is ready.

Take the glasses out of the refrigerator and fill them two-thirds full with whipped cream, preferably using a pastry bag. Place the glasses back in the refrigerator for at least 2 hours, covered with plastic wrap.

Meanwhile, prepare a sauce (purée) from 3 kiwis. Just before serving, add the kiwi sauce on top and garnish with a tangerine slice. Your European dessert is ready, enjoy!
