Estonian cinnamon pastry

Description

Homemade baked treat for tea. To prepare Estonian-style cinnamon buns, do the following: for the dough, mix melted butter, egg yolk, salt, flour, and warm milk with yeast. Knead the dough and let it rise for 1.5 hours. Then roll it out into a flat sheet and spread with a filling made of butter, cinnamon, and sugar. Roll the dough with filling into a log, cut it lengthwise, leaving one end almost uncut, and braid the two halves together. Shape the braid into a circle, brush with the remaining filling, and bake in the oven for 25 minutes at 200°C. Serve warm or cooled. Perfect with tea.

    Prepare the bun dough. To do this, warm the milk, mix it with the yeast, and let it sit for 15 minutes. Melt half of the butter and mix it with the egg yolk using a whisk. Add flour, a pinch of salt, and the milk with yeast. Mix and knead the dough.

    Then place the dough in a bowl greased with vegetable oil and let it rest for an hour and a half.

    For the bun filling, melt the remaining butter and mix it with sugar and cinnamon. Roll out the dough and spread two-thirds of the filling over it.
