
Turkey escalope
Description
The recipe won't take much time. You can fry escalopes in breadcrumbs or batter in a pan, or bake them in the oven. This is a perfect addition to any side dish or salad (even an unusual one). You can use any spices to taste, or simply season with salt and pepper. Serve hot.

1. Wash the turkey meat, then pat it dry with paper towels. Season both sides with salt and paprika, and let it sit for half an hour.

2. Cut the apricots in half, then remove the pits and chop them into small pieces. Peel and dice the onion, chop the basil leaves.

3. Mix vinegar, sugar, two tablespoons of olive oil, and fruit juice.

4. Heat a skillet with the remaining vegetable oil, add the onion and sauté until golden brown, then transfer to a bowl and mix with the fruits and herbs, then refrigerate.

5. Return the skillet to the heat and cook the escalopes: sear them on each side until golden brown.

6. Transfer the escalopes to a bowl, serve with apricot garnish and greens.
