
Enfrijoladas
Description
Recipe for preparing a Mexican dish of tortillas, beans, and cheese. Serve enchiladas with a spoonful of sour cream, salsa, and chopped fresh cilantro. The dish is ready. Serve at the table.

1. Heat the beans in a large skillet. Add vegetable broth, water, tomato paste, and stir until a uniform mixture.

2. If you want a thinner sauce, add extra water until you reach the desired consistency. If the sauce is too thick, it may tear the flatbreads.

3. Using tongs, take a flatbread and dip it in the sauce. The flatbreads should become moistened and soft; do not leave them in the sauce for too long.

4. Place the tortilla soaked in sauce into a small baking dish. Sprinkle a small amount of cheese on one side of the tortilla, then fold it in half like a quesadilla. Repeat with the remaining tortillas, filling the dish. Pour the remaining sauce over the dish and sprinkle with the remaining cheese.

5. Bake in the oven at 175 °C for 10–15 minutes, until the cheese melts.
