
Chicken Enchiladas in Lavash
Description
It's suitable both for special occasions and everyday meals. Enchiladas are a hearty, satisfying main course. They can also be served cold as an appetizer. Choose according to your taste.

Prepare the necessary ingredients.

Heat 60 ml of vegetable oil in a skillet. Sauté the roughly chopped onion until softened.

When the onion becomes soft and starts to brown, add the mushrooms. Sauté until the liquid has evaporated.

Cut the chicken fillet into small pieces.

Add the chicken breast to the sautéed onions and mushrooms. Season with salt and pepper. Sauté for 5 minutes.

Remove the seeds from the peppers. Dice into small cubes.

Add the pepper to the skillet and sauté for 5 minutes, stirring.

Add 1 tbsp tomato paste and minced garlic. Stir to combine. Warm through for 3–4 minutes. ✨

Make the sauce. In half a glass of water, dilute 2 tbsp. tomato paste.

Heat one tablespoon of vegetable oil, add one tablespoon of flour. Mix.

Pour in the diluted tomato paste. Add another half cup of water. Stir well so there are no lumps. Heat over medium heat. When it starts to bubble, remove from the heat immediately.

Cut the lavash into sheets. Consider the size based on the shape of the dish you will be baking in.

Make roll-ups. A little in from the edge, place 3 tbsp of filling on a sheet of lavash.

Pour 1/4 of the prepared sauce into the bottom of the dish. Arrange the prepared meat rolls.

Brush the rolls on top with the remaining sauce and sprinkle with cheese grated on the coarse side of a grater. Bake for 20 minutes in an oven preheated to 180°C. Keep in mind how your oven behaves!
