Alsatian apple pie

Description

Delicious baked treat for the whole family. The pie will taste even better if allowed to sit for a while after baking. In this pie, apples can also be replaced with pears, peaches, or apricots. The baked good is ready. Serve at the table.

    1. Preheat the oven to 190 degrees with the rack in the center of the oven. Place the pie dish on a baking sheet, and line the dish with parchment paper or a silicone mat. Peel the apples, cut them in half, and remove the cores.

    2. Cut the apple halves into thick slices (about 6-10 mm thick). You should get about 12 slices from each apple. Arrange the apple slices overlapping each other. It's okay if the apple slices extend beyond the edge of the crust. In a bowl or measuring cup, use a mixer to beat heavy cream, sugar, egg, egg yolk, and vanilla extract. Pour the mixture over the apples. This will form the custard.

    3. Bake the pie for 50–55 minutes, until the apples can be easily pierced with the tip of a knife. Transfer the pie to a wire rack and let it cool until it's slightly warmer than room temperature. To make the apple glaze, bring apple jelly and water to a boil in a medium saucepan. Using a pastry brush, coat the entire surface of the pie with the hot jelly. If the apples and custard have separated from the pie, use the glaze to fill in the cracks. If you're not using the glaze, dust the pie with powdered sugar.
