Description

Perfectly pairs with tea and coffee. For extra crumbliness, add semolina to the dough—not regular semolina (coarse semolina)! Regular semolina is coarser than fine semolina and will be too noticeable in the finished cookies. But if you still decide to use coarse semolina, grind it finely using a coffee grinder. Enjoy your time in the kitchen! Serve with tea or coffee.

    Prepare the necessary ingredients. Soften the butter to room temperature.

    Toast the nuts (I used walnuts and hazelnuts) in a dry skillet for 4-5 minutes, then peel and grind into crumbs using a blender.

    Beat the butter with a mixer, gradually add the powdered sugar, cardamom, and beat until smooth.

    Mix flour, semolina, baking powder, salt, and crushed nuts.

    Add the butter mixture and knead a soft dough by hand.

    On parchment paper, spread the dough into a rectangle about 20x25 cm. Use a knife to make deep cut lines, marking 24 cookies. You can make more by making smaller cookies. Prick each one several times with a fork. Place on a baking sheet.

    Preheat the oven to 120°C. Bake the cookies for 1 hour until pale golden in color. Not dark brown! Let cool slightly, then cut along the marked lines.
