
Eclairs with buttercream
Description
Delicious baked goods for the whole family. Éclairs with cream filling are, perhaps, my children’s favourite treat—and mine too, if I’m honest! For a long time we treated ourselves to shop-bought ones, but one day I made them at home and was pleasantly surprised at how simple it can be, and flavour-wise the éclairs turned out no worse than from the store. So here’s a recipe that worked well for me. Good luck. You can serve them with tea or coffee.

1. Prepare all ingredients.

2. Bring the water to a boil. Add a pinch of salt, butter, and bring everything to a boil again.

3. Remove the saucepan from the heat and add the flour.

4. Quickly mix everything until the dough is smooth and even.

5. Let the dough cool slightly, then add the eggs one at a time, stirring the dough with a spoon or spatula after each addition. First add two eggs, one at a time. Beat the third egg in a separate bowl and add it to the dough one tablespoon at a time. If needed, add another egg the same way. Depending on the variety of eggs, you may use as few as 2.5 or as many as 3 or 4.

6. The dough should end up quite soft but still hold its shape well.

7. Using a pastry bag or a teaspoon, pipe or drop the dough onto the baking sheet as small logs, leaving a little space between each one.

8. Bake in an oven preheated to 180 degrees for about 30 minutes. The éclairs should rise well and take on a slightly golden tint. Cool the finished éclairs on a wire rack.

9. Meanwhile, prepare the cream filling. Beat the cream cheese with powdered sugar. Separately, whip the cream. Combine the cream and cheese and beat everything together until smooth.

10. Fill the éclairs with the prepared cream.

11. Before serving, decorate the eclairs to your taste. You can dust them with powdered sugar or drizzle them with melted chocolate.
