Cream puffs with cheese filling
Description
Homemade pastries for tea. When the famous 19th-century French chef Marie-Antoine Carême invented éclairs, he had no idea that chefs around the world would go on to experiment with this delightful treat. I offer an amazing recipe for a festive yet everyday snack—éclairs with cheese filling. If you fill them while still warm, the filling will melt, allowing you to enjoy an incredible flavor. The pastry is ready. Serve at the table.
Instructions

Step 1

1. For éclairs, we will need regular choux pastry. First, place a container with water, butter (you can substitute with margarine), and a pinch of nutmeg over heat.
- 2
Step 2

2. Bring to a boil, add flour. Quickly knead the dough. Gradually add eggs one at a time, continuing to stir.
- 3
Step 3

3. The dough should have the consistency shown in the photo. The correct consistency of choux pastry is when the dough falls from the spoon in a triangular shape.
- 4
Step 4

4. Lightly toast the sesame seeds.
- 5
Step 5

5. Using a pastry bag, pipe our eclair preparations onto a baking sheet. Sprinkle the dough with sesame seeds and place in the preheated oven.
- 6
Step 6

6. On average, eclairs are baked for 20 minutes at 180 degrees. Meanwhile, prepare the filling: grate the cheese, add garlic, herbs, and mayonnaise.
- 7
Step 7

7. Mix everything thoroughly. Dill is the best herb to use, as it pairs better in flavor with the cheese and garlic.
- 8
Step 8

8. When the eclairs are baked and have cooled slightly, cut them open from the side and add the filling.
- 9
Step 9

9. That's it, our eclairs with cheese filling are ready! The filling for them can be not only sweet but also savory, as in this case. Instead of cheese, you can use chicken, mushrooms, or meat.
