
Eclairs with mascarpone
Description
Do you love eclairs? Then make them with mascarpone cheese. In my opinion, this is the tastiest and simplest filling for eclairs. The stated amount of ingredients yields 20 eclairs. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Into the sauté pan, pour the milk and water, add a pinch of salt and a teaspoon of sugar, and heat.

Melt 100 grams of butter in a hot mixture of water and milk, heat it, but do not boil.

Add all the flour at once, stir well until the dough pulls away from the sides of the saucepan. Let it cool slightly, add the eggs one at a time, mixing them thoroughly into the dough. The dough should be well and evenly mixed.

Transfer the dough to a pastry bag and pipe onto parchment. Preheat the oven to 190 °C, bake at 190 °C for 30–35 minutes, then lower the temperature to 160 °C and bake for another 10 minutes.

While the eclairs are baking, prepare the cream. For this, mix mascarpone, vanilla, powdered sugar and 2 tbsp of heavy cream.

Whip the cream until it becomes a fluffy mass, then place it in the refrigerator.

Cool the éclair shells completely before filling them.

To fill eclairs there are several methods. You can cut them in half with a sharp knife, or you can make three punctures from the bottom. I especially like this method. Transfer the cream into a disposable pastry bag, cut off a corner, and pipe the cream through the punctures.

To make chocolate glaze, place the chocolate in a saucepan, breaking it into pieces, add a little cream, and heat over low heat.

Remove from heat, add butter to the chocolate mixture, stir well until smooth, and let it cool slightly.

Dip the eclairs, top side first, into chocolate glaze, then chill. The eclairs with mascarpone cream turned out simply stunning, beautiful, delicate, and delicious!
