
Eclairs with meringue cream

Cream-filled eclairs, no matter what type of cream they contain, are a favorite treat not only for children but for adults as well. Despite their elegance, making eclairs at home is quite easy. The ingredients are simple and readily available, yet the result is absolutely delicious! Treat yourself and your loved ones! Eclairs can be decorated with any icing or simply dusted with powdered sugar—either way, they will taste amazing. Serve them warm or chilled. Perfect with tea.

1. Prepare all the necessary ingredients.

2. Pour water into a saucepan and add the butter. Melt the butter, stirring over low heat.

3. Without removing the saucepan from the heat, gradually add the flour in parts.

4. Each time, stirring the mixture with a spatula, knead the dough and remove from the stove; let it cool slightly.

5. Add the eggs one at a time. The number of eggs needed may vary, so it's better to add them gradually. First, incorporate the first two eggs one after another, then, if necessary, beat one or two additional eggs separately with a fork and add them to the dough in portions.

6. The finished dough should not be too thick or too runny. The consistency should be smooth and uniform.

7. Transfer the dough into a piping bag with a nozzle and pipe onto a baking sheet lined with parchment paper.

8. Bake the eclairs at 180°C for about 30 minutes until lightly golden.

9. While the eclairs are cooling, prepare the cream. To do this, mix two egg whites, sugar, a small pinch of citric acid, and vanilla.
