
Cream puffs made from choux pastry with cream

1. First, prepare the cream so it has time to cool properly. Pour milk into a saucepan, add vanilla extract and about half of the sugar. Place over heat and bring to a boil.

2. Meanwhile, beat the eggs with the remaining sugar and sifted flour until smooth.

3. Constantly stirring, pour in the milk in a thin stream. Pour everything back into the saucepan and place over heat.

4. Over very low heat, constantly stirring, simmer the cream until thickened.

5. Remove from heat, add butter, and stir. Let the cream cool thoroughly. It's best to prepare it the day before.

6. To prepare the dough, place butter, milk, water, salt, and sugar into a saucepan and put it on the heat.

7. Remove the boiling mixture from the heat and add the sifted flour. Mix thoroughly. Return to the heat, continuing to stir.

8. Add the beaten eggs to the dough in small portions, constantly stirring (the eggs should not curdle!).

9. Place the finished dough into a piping bag and pipe onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200 degrees Celsius for half an hour. Do not open the oven during baking!

10. Whip the cream until fluffy and add it to the cream.

11. The final step is the glaze. Melt the chocolate with butter over a water bath, stirring well.
