Eclair with custard cream

Description

Perfectly pairs with tea and coffee. Éclairs are a delicious dessert that can also be used to make cakes. For the filling, you can use not only custard cream but also condensed milk or a cottage cheese filling (which is especially great in summer). Serve éclairs well chilled, either cooled down or slightly warm.

    For the cream: pour milk into a saucepan and place over heat.

    Meanwhile, combine the flour with sugar, mix, then add the egg yolks and whisk with a whisk.

    Gradually pour the hot milk into the bowl with the yolks, flour, and sugar, whisking continuously with a whisk.

    Pour the resulting mixture back into the saucepan and place over heat. Cook the cream until a thick consistency forms, then beat thoroughly for several seconds.

    Add the butter and vanilla, mix well, and remove from heat.

    Cover the pot with plastic wrap and leave until cooled.

    For the dough: in a saucepan, combine milk, water, butter, sugar, salt, and place over heat; bring the mixture to a boil.

    As soon as you notice the liquid boiling, immediately add the flour and vigorously mix with a wooden spatula until a single lump forms.

    Add the eggs one at a time to the slightly cooled dough; the dough will become elastic and soft.

    Line a baking sheet with parchment paper and place a tablespoon of dough each, spaced slightly apart.

    Place the baking sheet in a preheated oven at 220 degrees for 10 minutes, then reduce the temperature to 180 degrees and bake for another 15-20 minutes.

    Remove the eclairs from the baking sheet, let them cool, and make small openings (pockets) in each with a sharp knife.

    Using a spoon or a piping bag, fill the cooled eclairs with custard cream.
