Description
The dish is prepared without unnecessary complications. You can use any type of meat: chicken, pork, beef, veal, turkey, duck, and others. You can also use any kind of rice. Some recipes don't include rice, but I prefer it with rice. Plus, thanks to the rice, you get many more "little hedgehogs," and they are more filling. I serve them with any side dish or simply eat them with bread. The finished dish can be served at the table.

1. In a large bowl, I put turkey mince, washed rice, add eggs, and season with salt, pepper, and a mixture of Italian herbs to taste. I mix the mince well.

2. I make large hedgehogs (you can make small ones too). I take some minced meat from the bowl and roll it into a ball the size of a tennis ball.

3. Place all the meatballs into a cauldron or casserole dish. Mix the broth with starch and pour it over the meatballs. Cook for 2 hours over low heat, simmering.

4. Sprinkle the finished balls with finely chopped green onions or other herbs.
