
Blackberry cheesecake
Description
You can add blackberries both into the creamy filling and on top, creating beautiful purple patterns on the surface of your pie.

1. Preheat the oven to 350 degrees. Place vanilla waffles with pecans into the bowl of a food processor. Pulse until crumbly. Add melted butter and vanilla, then pulse again.

2. Transfer the mixture to a baking dish and spread evenly over the bottom and sides.

3. Prepare the filling. Beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Add the sour cream and mix again.

4. Pour the resulting mixture over the wafer base in the pan. Bake for 1 hour and 10 minutes. Turn off the oven, slightly open the door, and let the cheesecake stand in the oven for 15 minutes. Remove from the pan and let cool.

5. To prepare the topping, add blueberries, sugar, and water to a saucepan or skillet. Bring to a boil over medium heat and cook for 4–5 minutes. Remove from heat and let cool slightly. Pour the topping over the cheesecake and refrigerate for at least 2 hours or longer to chill.

6. Cut the cheesecake into 16 pieces using a serrated knife and serve.
