Echpochmak
Description
The recipe won't take much time. These Tatar pastries have many variations, but I've settled on one of the most popular ones—filled with potatoes, onions, and poultry. The dough should be firm. The pastries are shaped into triangles. This dish can replace a full meal, as the ingredients are very filling. The pastries are ready. Serve them at the table.
Instructions
- 1
Step 1

First, mix the dough using melted butter, sour cream, kefir, sifted flour, baking powder, egg yolk, and salt. The dough should be elastic.

Step 2

Now prepare the filling. Peel and wash the potatoes and onions, then finely chop them. Add finely chopped goose fillet to the mixture. Combine the ingredients with salt and pepper.
- 3
Step 3

Roll out the dough into a 3 mm thick sheet.
- 4
Step 4

Cut out circles 15 cm in diameter from it.
- 5
Step 5

Place the filling in the center of each.
- 6
Step 6

Pinch the edges of the dough toward the center as shown in the photo. Leave a small hole in the middle.
- 7
Step 7

Place the parcels into a greased heatproof baking dish. Put them into a preheated oven at 180 degrees. Bake for 25 minutes.
- 8
Step 8

After this time, remove the buns. Pour 2 tablespoons of broth into the center of each one.
- 9
Step 9

Bake the items for another 10 minutes. Let them rest, and taste.
