
Two-layer nut cookies
Description
Perfectly pairs with tea and coffee. This creamy cookie with a nutty filling is quickly made from simple ingredients. You can substitute pecans with walnuts. Serve with tea or coffee.

1. Roast the nuts on a baking sheet in the oven and finely chop. Using a mixer, beat 1/2 cup of butter and cream cheese in a bowl. Add flour in several batches and mix thoroughly. Roll the prepared dough into a ball, then refrigerate for 15 minutes to chill.

2. Meanwhile, melt the remaining butter. In a medium bowl, whisk together the egg, brown sugar, and vanilla extract. Stir thoroughly with the melted butter and chopped nuts.

3. Shape the chilled dough into balls approximately 5 cm in diameter. Place the dough into mini molds.

4. Place the nut layer on top of the dough.

5. Bake the cookies in a preheated oven at 175 degrees for about 15-25 minutes.

6. Remove the cookies from the oven and let them cool in the pan for 5 minutes, then turn them out onto a wire rack and allow the cookies to cool completely.
