
Double-decker sandwich with tomatoes and hummus
Description
A delicious appetizer for any gathering. A tasty and colorful two-decker sandwich will win over any vegan or vegetarian with its look and flavor. You can make the hummus ahead from chickpeas, peas, beans, or other legumes—as you like.

Prepare the listed ingredients. Soak the chickpeas in advance and cook for approximately 4-5 hours, then let cool.

Pour the chickpeas into the bowl of a food processor, add vegetable oil (preferably cold-pressed olive oil), add the seasoning and salt, and add tahini paste.

Process everything for 4–5 minutes, including using the pulse setting. If the mixture becomes too thick, add a little of the broth in which the chickpeas were cooked.

Cut the toast bread diagonally into equal triangles. On some of them, place the washed lettuce leaves; spread the others with the prepared hummus.

Wash the tomatoes, cut out the green cores, and slice into rounds. Arrange the tomato rounds on the lettuce leaves.

Assemble the sandwiches by stacking the bread triangles on top of each other.
