
Two‑coloured shortbread cookies
Description
Almond flour in the recipe can be substituted with ground almonds. Moreover, it’s not necessary to grind the almonds into flour – it would be nice if the cookies also contain almond crumbs.

1. Cream the room‑temperature butter with sugar using a fork.

2. Add the egg, baking powder, and salt.

3. Add vanilla, sift the flour.

5. Divide the dough into 2 parts: 2/3 and 1/3.

6. To the larger portion add the remaining flour. To the smaller portion, cocoa powder.

7. Add almond flour or ground almonds to the chocolate batter.

8. Mix each type of dough well, wrap it in plastic wrap, and refrigerate for 30 minutes.

9. Roll out the plain dough into a rectangle 3‑4 mm thick.

10. Roll a sausage from the chocolate dough and place it in the center of the rectangle.
