Description

Often we don't finish the milk or simply forget it's in the refrigerator. Even then, the product will still find a use in the kitchen. The baking is ready. Serve at the table.

    Prepare the ingredients for making oladyi. Warm the prostokvasha in the microwave beforehand. Take the eggs out of the refrigerator ahead of time so they come to room temperature.

    In a suitably sized bowl, beat in two eggs and add the sugar and salt. You can use a mixer or a stand mixer to knead the dough.

    Beat the eggs with salt and sugar. The mixture should increase in volume and lighten in color.

    Pour in the warm kefir and beat the mixture again with a mixer for 2–3 seconds.

    Sift the flour through a fine sieve. Add the flour to the dough in portions, fully incorporating each addition.

    The finished dough should be thick and drip slowly from the spoon. Set the bowl with the dough aside so the baking soda can activate in the acidic environment.

    Heat the skillet well and pour in a portion of vegetable oil. Spoon the batter into the skillet, forming pancakes. Reduce the heat and fry the pancakes on both sides until golden brown.

    Pancake batter can be piped onto the skillet using a pastry bag. This way you will get even pancakes of uniform size. To do this, after mixing, transfer the batter into a pastry bag. When the bag is full, squeeze out the excess air. Twist the bag 5–6 times and secure it with a clip.
