
Dungan noodles
Description
The recipe won't take much time. Like most traditional dishes, this noodle dish has many variations. Here is one of the simplest recipes, as the dough requires only 3 ingredients. Don't be intimidated by the noodle-pulling process—it's not difficult at all and even a beginner can handle it. Homemade Dungan noodles are incredibly delicious, so I highly recommend serving them hot.

1. First, knead a simple dough from flour and water with salt. Roll it into a ball and let it "rest." Every 10 minutes, knead the dough again to make it softer.

2. After about half an hour, place the dough onto a plate greased with vegetable oil. Coat it with oil on all sides.

3. Leave the dough in this form for another 5-10 minutes. Then cut it into 4 parts with a sharp knife.

4. Carefully shape each piece of dough into thin sausages by rolling and stretching them with your hands.

5. Place the finished sausages onto a plate, brush them again with oil on all sides, and let them "rest" for about 15 minutes. This is an important step: alternate working with the dough and let it rest briefly.

6. Continue working, stretching the noodles and making them thinner and thinner. Coil them onto a greased plate.

7. Continue stretching the noodles until they become thin enough. Be sure to coat your hands with oil during the process to make it easier to work with the dough.
