
Ducmak with cottage cheese
Description
The recipe won’t take long. When choosing cottage cheese for this bake, it’s very important to pick a dry product with no visible liquid. That matters for the end result, so the duchmak comes out nicely moist but not wet. You can add vanillin to the cottage cheese to taste and adjust the sugar. Don’t add too much, though—it adds extra moisture. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

In a bowl, combine warm sour milk, sugar, vegetable oil, and yeast. Mix well. Leave at room temperature for 10 minutes.

When the time is up, add the eggs. Stir.

Pour in most of the flour and salt. Add soft butter.

Start mixing with a spoon, gradually sprinkling in the remaining flour. When it becomes difficult to stir, knead with your hands. The dough should be soft and pliable. Add the flour in very small portions so you don’t stiffen it.

Round the dough. Transfer to a bowl. Cover with a towel and leave in a warm place for 1 hour 30 minutes.

While the dough rises, make the filling. In a bowl, mix cottage cheese, 4 tbsp sugar, and an egg.

Mix well. If liquid separates, drain it off. Put the filling in the refrigerator.

When the time is up, punch down the dough. Divide it into pieces weighing 50–60 g.

Roll each piece of dough into a ball.

Line a baking sheet with parchment paper. Place the dough balls with the twisted side facing up.

Flatten each ball with the bottom of a glass. Then press the base of the piece with your fingers and stretch it slightly outward. Place 0.5–1 level tbsp of filling on each. Pinch the edges into corners. There can be 4 or 6 of them.

Cover the prepared duçmaq with a towel and leave for 30 minutes. Then brush with egg and bake in a preheated oven for 25 minutes. Adjust for your oven’s quirks.

Take the finished baked goods out of the oven and remove them from the baking sheet. Transfer to a serving dish.
