
Yeasted doughnuts

1. Dissolve the yeast, salt, and sugar in warm milk (28–32 °C), add the egg. Mix until smooth.

2. Add the flour and mix at low speed using a food processor or by hand. Add the softened butter and knead the dough in the food processor or by hand for 10 minutes.

3. Shape the dough into a ball, place it in a bowl, cover with a towel or lid, and let it rise in a warm place for an hour.

4. Divide the risen dough into 30 equal portions using a scale or by eye. Each portion should weigh about 30 grams. Shape the dough pieces into balls, place them on a floured surface, cover with a towel, and let rise for 45 minutes.

5. After the allotted time, the doughnut dough should have increased in volume by approximately one and a half times. Heat vegetable oil in a deep fryer or other suitable vessel (a deep pot or a small-diameter frying pan). Fry the doughnuts in batches.

6. Fry each batch on both sides until golden brown. Let the hot doughnuts sit on paper towels for a while to drain excess oil.

7. Roll the ready, slightly cooled yeast doughnuts in fine granulated sugar or powdered sugar.
