
Yeast pancakes with kefir

Prepare all the ingredients from the list. It's better to use richer kefir that is not freshly made. You can substitute kefir with sour milk.

First, activate the yeast. To do this, add the dry yeast, one tablespoon of sugar from the total amount, and three tablespoons of flour into a bowl.

Pour in warm, but not hot, water.

Mix until a paste forms, cover the bowl with a towel, and let it sit for 10-15 minutes.

By this time, the sponge should have become bubbly. If this hasn't happened, change the yeast—these ones won't work.

Pour the warm kefir into the risen sponge (preheat it first, but not too much, otherwise it will curdle).

Heat a pancake pan over high heat. Pour vegetable oil onto the pan. The oil should completely cover the surface—this will make the pancakes fluffier. Place spoonfuls of batter into the heated oil, shaping them into pancakes.

Fry them over medium heat until golden brown, then flip to the other side. Transfer the cooked pancakes first onto a paper towel to remove excess oil, then onto a plate.
