Step 1

1. In a bowl, combine water and yeast, and let stand for 5 minutes. Add sugar, flour, salt, butter, and knead the dough. Cover with a towel and let the dough rise in a warm place for 1 hour.

2. Place the dough onto a lightly floured surface. Line two baking sheets with parchment paper. Cut the dough into 18 slices (60 g each). Shape each piece of dough into a smooth round ball by gently rolling it between your palms. Place the buns on the baking sheets about 2.5 cm apart. Cover with a towel and let rise in a warm place for 30 minutes, or until doubled in size.

Step 3

3. Preheat the oven to 220 degrees. In a large pot, bring 2 liters of water to a gentle boil. Add baking soda and reduce the heat. Place the buns into the water for 30 seconds, then carefully flip them over and wait another 30 seconds. Remove the buns from the pot and repeat the process with the remaining ones.

Step 4

4. Brush each bun with lightly beaten egg, making sure all sides are completely coated with the egg mixture. Sprinkle each bun with salt. Using a knife, cut a "/" or "X" symbol on the top of each bun. Bake the buns in a preheated oven for 15–20 minutes, placing the baking sheets on the lower and upper racks.
