
Yeast dough in a planetary mixer
Description
Homemade baked goods for tea. Yeast dough in a planetary mixer becomes uniform, smooth and does not stick to the hands. When shaping the pastries, you don't need to dust the table with flour. The dough doesn't stick to the table; in the worst case, use just a tiny amount of flour. To achieve perfectly kneaded dough, the planetary mixer takes 6–7 minutes. With hand kneading, it will take much longer.

Prepare the ingredients for making yeast dough.

Place the yeast into the bowl of a planetary mixer.

Pour warm milk and mix with the yeast.

Add sugar.

Add salt.

Melt the butter and add it to the dough.

Add the egg. Sprinkle in the vanilla sugar and sifted flour.

Place the bowl with the ingredients for the yeast dough into the mixer. Attach the “Hook” attachment and set the mixer to low speed. During kneading, adjust the dough consistency to your liking by adding flour or milk. Usually, I don’t add liquid; instead, I add flour to the bowl as needed, continuously mixing the dough. It turns out uniform, smooth in consistency and does not stick to the hands.

You can immediately add dried fruits and candied fruits to the ready dough if your baking recipe calls for it.

The yeast dough in the planetary mixer is ready. Transfer it to a pot, cover with a towel or plastic wrap, and place it in a warm spot until it increases in volume.
