The dough rises beautifully even in the refrigerator, and at room temperature it will be ready to use in less than an hour. With this dough recipe you can make any pies, enriched flatbreads, handheld pies with all kinds of fillings, and delicious homemade pizza. You can freeze part of the dough; it behaves very well after thawing—just let it rest a little in a warm place. Another plus is that the dough is very easy to work with; I don’t even use extra flour when shaping the items. Be sure to try it—it may well become your favorite. Serve warm or chilled. Prepare all the ingredients.

Combine the warm milk, kefir, and butter.

Add yeast, salt, sugar, and baking soda.

Mix and add the flour in portions.

Knead a soft, slightly sticky dough. Knead it well, shape into a ball, cover the bowl with plastic wrap, and leave in a warm place for about 1 hour.

The dough should nearly double in size.
