Description

It goes perfectly with tea and coffee. The dough is truly versatile—anything you bake with it will turn out delicious, fluffy, and golden brown. You can use it for pizza, hand pies, flatbreads, buns, and both open and closed pies with all kinds of fillings. You can also freeze this dough. When you need it, simply take it out and let it rest at room temperature for a couple of hours. The recipe is straightforward, and the ingredients are always within reach—don’t miss it. Serve warm or chilled. Perfect with tea.

    Prepare all the ingredients.

    For the sponge, combine 125 ml warm milk, 6 grams dry yeast, 15 grams sugar, and a little flour (80 grams).

    Mix and leave the starter for 15–20 minutes.

    Then add the eggs, salt, vegetable oil, and the remaining sugar.

    Gradually add the flour. At first mix the dough with a spoon, then continue kneading by hand. The dough will be soft and slightly sticky, not stiff.

    Gather the dough into a ball, brush with vegetable oil, cover the bowl with a towel, and leave in a warm place for 1 hour.

    The dough should rise to about 2–2.5 times its original volume.

    Press the dough down in the bowl with your hand, punch it down to release the air bubbles, and let it rest again, this time for about 30–40 minutes.

    Then knead the dough again, and you can start making buns, pies (small and large), rolls, flatbreads, pizza—in short, any baking! Bake goods made from this dough at 180 degrees.

    To give you an idea of the yield, this makes about 1 kg of dough. That should be enough for 12–14 pirozhki, three pizzas, one or two pies, or several flatbreads with different fillings. Happy baking!
