
Yeast Samasa
Description
Homemade pastry for tea. Yeast samosa can be made with any meat, but traditionally beef or lamb with some fat is used. The samosa turns out hearty, juicy, and delicious. It works as a snack and can easily replace a full lunch or dinner. Try it. The pastry is ready. Serve at the table.

Prepare all the ingredients.

In a deep bowl, combine kefir, salt, sugar, yeast, and egg.

Stir and add the flour in portions.

Knead a dense, firm and uniform dough. Knead it for about 10 minutes and place it in a warm place to rise.

When the dough has risen, divide it into two parts. Roll each into a thin rectangular sheet.

Spread the first layer with soft butter. Place the second layer on it and butter the dough again.

Roll into a tight log and, for convenience, cut it into two pieces. Wrap the dough in plastic film and refrigerate for 1.5–2 hours.

In the meantime, prepare the filling. Cut the meat into small pieces, add the onion diced into cubes, salt, spices, and mix well. You can add a couple of tablespoons of ice water for juiciness.

Take the roll out of the refrigerator and cut it into pieces. Depending on the size of the samsas, you may get 10 to 14 pieces.

Roll each piece into a circle and place the filling in the center.

Shape the samsa into a triangle or give it a round shape.

Transfer the samsa onto a baking sheet, let it rest a little, then brush it with egg yolk and sprinkle with sesame seeds. Bake in the oven at 180‑200 °C for about 40 minutes.
