Potato pancakes in the oven

Of course, all of us are well familiar with such a wonderful and delicious dish as potato pancakes (draniki). But has anyone ever tried baking them in the oven? If not, today I'll show you how to do it. This is a classic oven-baked draniki recipe requiring minimal ingredients and very little effort and time on your part! Sounds pretty good, doesn't it? Making draniki is quite easy, and all the necessary ingredients can easily be found at home—that's exactly why this dish has always been one of my favorites. While I used to prepare draniki on a stovetop skillet, recently I decided to try baking them in the oven, and the result exceeded all my expectations! Now I don't have to stand by the stove constantly, and the draniki turn out incredibly tasty and crispy, plus they're a bit healthier than fried ones. So today I'd like to share my experience and show you how to make delicious, aromatic oven-baked draniki.

    First, we need to peel the potatoes and onion and rinse them thoroughly. Be sure to cover the potatoes with water so they don't darken while we prepare the other ingredients. We also need to preheat the oven, so set the temperature to 220 degrees.

    Now slice the onion as you prefer.

    Grate the peeled potatoes on a fine grater, add a teaspoon of salt, mix and let the mixture stand for 5 minutes. Now squeeze out the excess liquid and transfer the potatoes to another container. Return the starch settled in the liquid back to the grated potatoes, and also add chopped onion. Pour in vegetable oil, add 1 teaspoon of salt and thoroughly mix everything.

    Place a sheet of parchment paper on a baking tray and spoon the mixture onto it, using one tablespoon per pancake. Put the tray into a preheated oven and bake for 15 minutes. Then reduce the temperature to 175 degrees, flip the pancakes over, and bake for another 45 minutes. When the edges turn golden brown, flip them once more and cook for an additional 15 minutes. Serve the cooked pancakes hot with sour cream. Enjoy your meal!
