Oven-baked potato pancakes with minced meat
Description
Homemade tea-time baked goods. You can use any minced meat filling for potato pancakes; a more dietary option like chicken will work, or, as in our version, a mixed pork and beef filling. Thanks to baking, we use a minimal amount of vegetable oil in the recipe, so these potato pancakes turn out less calorie-dense. You can serve the finished dish with sauce, sour cream, fresh vegetables, or light salads. Serve cooled or slightly warm.
Instructions
- 1
Step 1

Prepare all the necessary ingredients needed for draniki.

Step 2

Peel the potatoes, wash them, and dry them. Then grate the potatoes on a medium grater and transfer the shreds to a bowl.

Add chicken egg, salt and pepper, and wheat flour to the potatoes.
- 4
Step 4

Mix all the ingredients thoroughly. At the same time, preheat the oven to 180 degrees.

Step 5

Prepare a baking sheet, line it with foil, and lightly grease it with oil. Shape the potatoes into flat patties and place them on the baking sheet. Put a little minced meat seasoned with salt and pepper on top of the potatoes.
- 6
Step 6

Cover the minced meat with a little more potato. Return the baking tray to the oven for 40–45 minutes. After 30 minutes, flip the potato pancakes to the other side so they brown as well.
