Potato draniki with minced meat
Description
The recipe won't take much time. For the pancakes, I use yellow potatoes meant for frying—they don't turn into mash, and the pancakes turn out excellent. Choose any filling you like; if you don't prefer fatty meat, go for chicken—I'm using a pork and beef mix. For spices, I only use black pepper and smoked paprika, which gives a magical smoky aroma and flavor. See all the details in my step-by-step recipe. Serve hot.
Instructions
- 1
Step 1

Prepare the ingredients. Let's get started!
- 2
Step 2

Peel the potatoes and grate them on a coarse grater.
- 3
Step 3

Add the egg and the minced meat, mix well.
- 4
Step 4

Add chopped green onions, salt, pepper, paprika, and flour.
- 5
Step 5

Mix the potato pancake mixture very well.
- 6
Step 6

Heat a spoonful of butter in a skillet, then spoon the mixture into the pan or shape the patties with wet hands, whichever is more convenient. Fry under a lid until golden brown.
- 7
Step 7

Flip and fry the pancakes on the other side under the lid.
- 8
Step 8

Transfer the draniki to a paper towel to remove excess oil. Repeat with the remaining potato mixture. I ended up with 18 draniki.
- 9
Step 9

Serve with sour cream or adjika.
