
Baked dorado with lemon
Description
Dorada is a fish that will be the highlight of any celebration. Herbs and spices give the tender fish meat a special piquancy. This fish is excellent when baked.

1. First of all, we defrost the fish. This takes about an hour. Then we rinse it under running water, clean and gut it.

2. Grind the bay leaf, tarragon, and basil. You can add some fresh rosemary to this mixture. Chop the parsley. Slice the lemon and press the garlic.

3. Dry the fish with a paper towel, rub salt on the outside and inside. Sprinkle with pepper and herbs, and place two or three lemon slices into the cavity.

4. Grease the foil with vegetable oil, place the garlic on it, then lay the fish, and sprinkle with parsley.

5. Pour wine and olive oil over the fish. It is advisable to slightly tuck the edges of the foil inward. Wrap the fish (fold the foil edges upward) and place it on a baking sheet.

6. Place the baking sheet in the preheated oven for about thirty minutes over medium heat. Then transfer the fish to plates and garnish with lemon.
